Red Yeast Rice Description: Monascus Purpureus, a bright reddish purple fermented rice which acquires its color from being cultivated with the mold Monascus Purpureus, has been used for thousands of years in China. In the 1970s, Japanese scholar Yuento discovered Monacolin-K, a substance from the secondary metabolites of Monascus that can reduce human serum cholesterol. In 1985, American scientists Goldstein and Brown further discovered the mechanism by which Monacolin-K inhibits cholesterol synthesis and won the Nobel Prize.
